I had some blueberries I needed to use up so I made Blueberry Basil Jam.
I did not can it because it only made around 4 cups and I plan on giving some to my dad. Plus, I’ll eat toast with the jam for breakfast for a while. So it’s more a refrigerator jam.
4 cups blueberries
1 cup sugar
1 Tbsp lemon juice
2 Tbsp fresh chopped basil (I used a mixture of cinnamon and sweet basil from my garden)
Put the blueberries, sugar and lemon juice in a pan and cook over medium high heat until it comes to a rolling boil. Turn the heat down and simmer 25-30 minutes. Turn the heat off and stir in the chopped basil. Let cool and pour into refrigerator containers (I separated mine into four 1-cup recycled containers that used to hold oysters.)
Had some toast with this as a snack last night and it was delicious!
