Pizza has always been one of my favorite foods and now I can bring it to work with me for lunch with no hassle.
I simply toast bagel halves, spread on store-bought pizza sauce, add toppings and shredded cheese. Toasting the bagels helps them to not get soggy from the pizza sauce. Once assembled, I put them into plastic sandwich bags and freeze. You can flash freeze them on a baking sheet first and it helps to package them easier, but I just put them into the sandwich bags and froze them like that.
This would work equally as well with English muffins.
I used pepperoni and pepper-jack cheese for last week’s pizzas. But any toppings can be used – ham & pineapple, sausage, mushrooms, olives, onions, green peppers, ground beef, chicken – whatever you like!
I made six bagel half pizzas at once and it was enough for a week’s worth of lunches at work. In the morning, all I had to do is grab one out of the freezer and go. Very convenient!
At lunchtime at work, I simply microwaved for 30 seconds and voila, a delicious hot lunch.
This is a great way to save money. When you have your freezer stocked with homemade convenience foods that you can grab and go, you don’t need to go buy fast food or convenience food from the local convenience store. This may not be the healthiest food, but at least you know what you put on it and who prepared it.
