Chives are so pretty when in flower it’s always hard for me to cut them to use in the kitchen. But the flowers are very tasty and make food pretty so I usually take a few flowers from each of my 5 plants whenever I harvest. That leaves some colorful beauty in the garden for bees and other pollinators.
Chive butter is a great way to use the flowers and leaves. It can also be made with only the leaves but it’s more colorful when using both. Chive butter can be used on biscuits or rolls, baked or mashed potatoes, chicken, fish, beef, cooked vegetables, spread on crackers or on anything you want to add a buttery chive flavor to.
Chive Butter Recipe
- 1 stick of salted butter, softened
- 2 Tablespoons of chopped chive flowers and/or leaves
Add both ingredients to a medium mixing bowl and mix using a fork or mixer. It will last up to 1 week in the fridge or several months in the freezer (in case you want to make a large batch.
